cucina Italiana: raw and vegan pomodoro spaghetti

    For the pesto: (makes 3/4 cup, or 4 servings)

    1 cup shelled pistachio nuts
    2 cups tightly packed basil leaves
    1/4 cup olive oil
    2 tbsp lemon juice
    1/4 tsp salt (or more to taste)
    Black pepper to taste
